Valentine’s Day is all about love—whether it’s romantic, platonic, or some much needed self-love. For me, it’s also a great excuse to make a fun drink! This rose mocktail is simple and has a hint of floral flavor that’s perfect for Valentine’s Day 🩷.
Both rose and hawthorn berry are heart strengthening herbs and help with our emotional health. They can calm our nerves and reduce stress, helping create a relaxed and romantic atmosphere. Hawthorn berries can improve circulation and strengthen the cardiovascular system.
Overview of Rose Hawthorn Berry Champagne Vinegar
First, make a shrub (a drinking vinegar) made with rose and hawthorn berry infused vinegar and honey.
The vinegar takes a few weeks to infuse with the herbs, but you can use it after a few days if you need it sooner.
After the shrub is made, mix it with plain club soda to create the mocktail. You can use any fizzy drink you prefer, but I let the flavors of the shrub shine with plain club soda.
Vinegar extracts vitamins and minerals from herbs, releasing nutrients and beneficial compounds into the liquid. So this mocktail is both flavorful and medicinal!
To make it extra fancy, I added heart-shaped ice cubes made with rose tea.

Ingredients
- 2 tablespoons rose hawthorn berry champagne vinegar
- 1 tablespoon honey
- 1 cup club soda
- Ice (optional)
- Garnish (like edible rose petals or frozen berries)
Instructions Summary
- Mix the vinegar and honey in a glass or small bowl. Stir until the honey dissolves. It can take a minute or two to get it all dissolved – just keep stirring! Taste it. If it’s too tart, add a little more honey. If you like it tangier, add a touch more vinegar. I prefer two parts vinegar to one part honey, but adjust to your preference.
- Chill your favorite fancy glass or add some ice to it. Pour the vinegar and honey mixture into the glass.
- Slowly pour in the club soda. Give it a gentle stir.
- Garnish with frozen berries or rose petals.
- Serve and enjoy!
This mocktail is great for a quiet night alone or when you want to serve something fun and alcohol-free to guests. The rose vinegar adds a unique floral note that feels fancy without any effort.
