Heart-shaped ice cubes are a simple way to make your Valentine’s Day drinks extra special. To create the different shades of pink, I infuse the water with rose petals and a pinch of beet powder. Use these floral ice cubes in iced teas, lemonades, mocktails, and cocktails.

This recipe involves making a rose tea for heart-shaped ice cubes. I use beet powder to enhance the pink color of the tea, but you could also use cranberry juice, pomegranate juice, raspberries, or food coloring.
The silicone molds I used came in a set of two. They hold about one teaspoon of liquid per heart, so eight ounces of tea will be more than enough to fill both molds.
I purchased the molds from Amazon, but you can find them at Target and other stores, too.

Equipment Needed
- Small pan with a lid
- Fine mesh strainer
- Measuring cup with a spout
- Heart-shaped silicone molds or any ice cube tray you prefer
Ingredients
- 1 tablespoon dried rose petals
- Pinch of dried beet powder, optional for added color. Add more as needed for darker shades of pink.
- 8 ounces water
*If you don’t have beet powder, you could use cranberry juice, pomegranate juice, raspberries, or food coloring.
Instructions Summary
- Infuse: In a small pan, bring the water to a boil, then remove from the heat. Add in the rose petals and beet powder (if using). Cover the pan with a lid. Let everything steep in the pan for 10 minutes.
- Strain: After steeping for 10 minutes, strain the tea into a measuring cup with a spout.
- Freeze: Pour the rose tea into the heart ice cube molds and freeze for 2 hours, or until fully frozen.
- Store: Once the ice cubes are fully frozen, pop them out of the tray and store them in a freezer bag or other freezer-safe container. Push all the air out of the bag before returning to the freezer.
- Serve: Add to your favorite drinks!
Tips:
Before serving, make sure the glass and all your drink ingredients are chilled. This will help the ice cubes hold their shape for longer.
Make sure your rose petals are food grade and free from pesticides or chemicals.
Experiment with other herbs or fruits, like hibiscus, rose hips, or berries to create that pink hue.
